Instant Pot Kidney Bean Tacos Recipe
Do you have kidney beans around your house and you don’t know what to do with them? And do you have an instant pot? I came across this recipe one day when I was wondering the exact same thing. I had red kidney beans and no idea what to do with them. I didn’t have an Instant Pot at that stage, but I have learned to convert recipes for the Instant Pot, and so I adapted the recipe for the Instant Pot to make Instant Pot Kidney Beans.
So I googled. I found out that using kidney beans as a Taco filling was not only healthy, but also very frugal. And for that reason, I went and searched for an Instant Pot Kidney Bean Taco recipe. I didn’t find one for the Instant Pot, but as I said, I converted it to work in the Instant Pot. The original recipe was from a website called Life With Katy, which is linked down below the recipe.
How to make this recipe a Frugal Instant Pot Kidney Bean Tacos Recipe
This Instant Pot Kidney Bean Tacos Recipe is a frugal recipe already as meat costs a lot more than red kidney beans, but some tips where you can make this even cheaper is to buy no name brand red kidney beans. Another option for the tacos is to buy the kidney beans at Dollarama because sometimes their prices are cheaper.
I generally buy mine from Superstore, as I find they are quite affordable, especially if you live paycheck to paycheck. I also buy frozen no name corn from Superstore and only use what I need, and freeze the rest again for another meal.
The other thing you can do is to buy the spices in refill bags instead of buying them in the containers. That way, they last longer when you add them to your empty containers that you used last time, and recycle the containers again, with only spending for the spices and not the container that they come in.
The secrets to the Instant Pot Kidney Bean Tacos Recipe
The key to Kidney bean tacos made in the Instant Pot is the spices. With the right spices and quantities, you can make anything taste like tacos. And the best is, that with this recipe, my kids love these tacos. It’s vegetarian, frugal and kid friendly! If you don’t have tacos on hand, you can make burritos like I do, by popping them into the oven and baking the top.
So how do you make this frugal, kid friendly Instant Pot kidney bean taco recipe? It’s not that hard. There are kidney beans, tomatoes, corn, onion, garlic, olive oil, cumin, chili powder and tortilla shells involved. Optional extras include cheese and sour cream, which I always say is a must. You cannot have any tacos without sour cream. It just is the way it is and if you don’t like sour cream, then I feel sorry for you because you don’t know what you are missing 🙂
You simply saute the onions until they are glazed first. After that, you throw in the kidney beans, but make sure that you rinse them first. Quickly add the crushed tomato, corn, garlic, cumin and chili powder. Then you just close your instant pot and let it go for 5 minutes on pressure. Once it beeps, you have a fantastic taco filling.
I always fold the soft tacos into burrito format and add cheese on top, close them and broil them in the oven for two to three minutes until brown on top, and then I put sour cream on top and give it to the kids.
Instant Pot Kidney Bean Taco Recipe (Makes 4)
Ingredients:
- 1/2 Cup kidney beans
- 1/2 Cup chopped or diced tomatoes (fresh or canned)
- 1/4 Cup corn
- 1/4 Cup onion (cut into tiny blocks)
- 2 Cloves of garlic or 2 tsp crushed garlic
- 1 Tbs Olive oil (for frying the onion and garlic if you have fresh garlic)
- 1/4 Tsp ground cumin
- 1/4 Tsp Chili powder
- 4 Tortilla Shells
Method:
- Saute the onion (and fresh garlic) until it’s glazed.
- Quickly add the tomatoes, corn, kidney beans, cumin and chili powder
- Close the seal vent of your Instant Pot and switch it onto pressure cook for 5 minutes
- When it beeps, vent the seal and dish the kidney bean taco filling onto the tacos
- Top with cheese and sour cream
