If you are like me, you need things done quickly. Also, if you are like me, it needs to be frugal. Well, you’re in luck. Through a lot of effort and research, I have found a recipe that works really well and is very tasty. The bonus is that this recipe can be adapted to be a kid friendly slow cooker lasagna recipe. This cheap slow cooker lasagna is also a fast prep, slow cooker lasagna. The only effort on your part, is to cut the veggies and throw the ingredients together. 1

The easiest way to make this frugal kid friendly slow cooker lasagna is to cut up the veggies first. The next thing is to get all the spices together in one place, at one time. Perhaps in a little container where you pre mix them all before having to add them to the rest of the ingredients.

The trick here, to make this frugal slow cooker lasagna kid friendly, is to blend all the ingredients together before adding the meat. So once you’ve done your veggies, herbs and spices, and your diced tomatoes, you should blend it before adding the meat. In this way, the kids don’t see the veggies in the slow cooker or on their plates, thus no endless complaining that they don’t want to eat it. An extra trick to make it a little tastier, is to add some pasta sauce to it.

The final thing to do is to add the cheese. This frugal kid friendly slow cooker recipe is so adaptable, that you can basically do whatever you want to with the cheese and it will still work. Whether you want to add cottage cheese to it, or just use mozarella cheese, or mix marble cheese and mozarella cheese, or even add cheddar cheese, this kid friendly slow cooker recipe will work with any blend of cheese that you want to add. The less types of cheese you use though, the more frugal this slow cooker lasagna recipe will be. I have used only mozarella and it’s been delicious. I’ve also used only marble cheese, and that has been delicious too.

Slow Cooker Lasagna Recipe

Ingredients:

  • 2 stalks of celery, chopped up
  • 2 carrots, chopped up
  • 1 bell pepper cut up
  • 1 onion cut up
  • 1 can of 630ml crushed tomatoes (no name brand)
  • 2 tbsp tomato paste (no name brand or a tube)
  • 500g ground beef (no name brand)
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 tsp parsley
  • 1/2 tsp basil
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 2 cups mozarella cheese (no name brand)
  • 1 cup cottage cheese (no name brand)
  • 1/2 box lasagne sheets (no name brand)

Method:

  • Cut veggies and add it to a bowl. Make sure the pieces are small enough to be blended
  • Add the can of crushed tomatoes, veggies and all the herbs and spices to the blender
  • Blend this well until only a sauce is visible
  • Add the meat to the saucy mix
  • In the slowcooker, put a layer of the sauce at the bottom
  • Add a layer of the lasagne sheets
  • Add another layer of the sauce
  • Top with half of the cheese
  • Add another layer of lasagne sheets
  • Add the final layer of the sauce
  • Add the final layer of cheese
  • Cook on high for 6 – 8 hours

Enjoy! This recipe feeds roughly 4 people, depending on the appetites. My kiddos love this frugal kid friendly lasagna recipe so much, that they come back for seconds!
